DABELI :

SWEET CHUTNEY : Boil 1 cup jaggery, 1 cup dates, 1 marble sized tamarind in water for 5 min. After this cools down, squeeze out the dates and tamarind. This gives sweet chutney

GREEN CHUTNEY : Grind corriander leaves 1-cup, green chillies, 1/2 cup mint leaves(optional), salt, lemon juice into a fine paste. This gives green chutney.

DABELI MASALA PROCEDURE : 

  • Boil 4 potatoes and 1 cup groundnut
  • Once it cools, Peel and mash the potatoes into a fine paste.
  • In a tawa add 1 spoon butter. Fry finely chopped onions-2 until golden brown
  • Now add the mashed potatoes, groundnuts, salt, dabeli masala-1 spoon, chilli powderWP_20150928_004
  • Add 2 cups water. Let the mix boil well until it solidifies.
  • Switch off the gas, and garnish with corriander leaves

  • SERVING PROCEDURE :
  • Cut pav into half
  • In chapati tawa, put 1 spoon of butter. Heat the pav both sides.
  • Now apply 1 layer of  green chutney, 1 layer of sweet chutney, dabeli masala, pomogranates, grapes(optional).
  • Close the pav and serve when hot. Garnishing with sev / grated cheese is little modification of Dabeli.
