DABELI :
SWEET CHUTNEY : Boil 1 cup jaggery, 1 cup dates, 1 marble sized tamarind in water for 5 min. After this cools down, squeeze out the dates and tamarind. This gives sweet chutney
GREEN CHUTNEY : Grind corriander leaves 1-cup, green chillies, 1/2 cup mint leaves(optional), salt, lemon juice into a fine paste. This gives green chutney.
DABELI MASALA PROCEDURE :
- Boil 4 potatoes and 1 cup groundnut
- Once it cools, Peel and mash the potatoes into a fine paste.
- In a tawa add 1 spoon butter. Fry finely chopped onions-2 until golden brown
- Now add the mashed potatoes, groundnuts, salt, dabeli masala-1 spoon, chilli powder
- Add 2 cups water. Let the mix boil well until it solidifies.
- Switch off the gas, and garnish with corriander leaves
- SERVING PROCEDURE :
- Cut pav into half
- In chapati tawa, put 1 spoon of butter. Heat the pav both sides.
- Now apply 1 layer of green chutney, 1 layer of sweet chutney, dabeli masala, pomogranates, grapes(optional).
- Close the pav and serve when hot. Garnishing with sev / grated cheese is little modification of Dabeli.
